Toledo. Traditional mountain agriculture.

Our lands have climate and soil conditions that are very favourable to the birth of exceptional olive oil. The inhabitants, from the first Phoenicians to the present day, including Romans and Arabs, have been developing a slow selection process for centuries that has given rise to Cornicabra, a variety of olive exclusive to these lands and recognised worldwide for its quality.

Slow-growing, Cornicabra is cultivated in old traditional plantations that, although they do not achieve the high yields of intensive plantations, allow the process of obtaining the oil to be taken care of to the maximum in order to obtain the best quality. Extraordinarily stable, Cornicabra oils have high contents of oleic acid, polyphenols and antioxidants that give them great resistance to oxidation or rancidity.
